It has a flavored well marked lactic base, it has a grit and a friability already appreciable.

It can be eaten by itself as an aperitif accompanied by a glass of white wine, or it can be combined with raw vegetables or fruit mustard with a slightly spicy taste.

The aromas are accentuated, you can appreciate notes of melted butter and fresh fruit, citrus fruits make their appearance alongside with hints of dried fruit. The cheese evolves in a balance of sweet and savory, it is perfectly soluble, crumbly and grainy.

Perfect with red wine quite structured. Ideal accompaniment to any type of dried fruit, it is superb with prunes and figs.
