  • It has a flavored  well marked lactic base, it has a grit and a friability already appreciable.

  • The paste is still soft, you begin to feel the aromas that distinguish it.

  • It can be eaten by itself as an aperitif accompanied by a glass of white wine, or it can be combined with raw vegetables or fruit mustard with a slightly spicy taste.

  • The aromas are accentuated, you can appreciate notes of melted butter and fresh fruit, citrus fruits make their appearance alongside with hints of dried fruit. The cheese evolves in a balance of sweet and savory, it is perfectly soluble, crumbly and grainy.

  •  The dough is crumbly and grainy.

  • Perfect with red wine quite structured. Ideal accompaniment to any type of dried fruit, it is superb with prunes and figs.

  • This cheese, the richest in nutrients is more decisive and complex with aromas. The notes of spices and dried fruit are predominant.

  • And more dry, crumbly and grainy.

  • Both red wines with high body and structure with both white wines and dessert wines from meditation. Try pairing with honey and a perfect match to the traditional balsamic vinegar of Modena and Reggio Emilia.
